Opening Our Restaurant

...You need to know how to Open our venue. This lesson is about our Opening Procedure and includes: Storage and layout of decor and furniture Lighting and music Opening the venue Setting up the cash register

Light Switches Aim to dim the lights as the night goes on. A good rule of thumb is to match the brightness of the light that's outside.

Music To turn the speakers on simply press the power button and select an appropriate playlist from the connected device.

Getting ready for service! Fill water pitchers Check reservation lists and make note of any special requests

What should you do before service begins? Select all that apply

It's not just turning on music and dimming the lights (but it sort of is).

It's the whole atmosphere.

Put teatowels and glass cloths in two neat stacks, bags & shoes on shelves, jackets & shirts hung up. Tidy the office, put away invoices, & clear the floor. Now time for outside!

Now, take all chairs down from the tables, then move tables, chairs and the heater carefully outside.

Closing Our Restaurant

Cleaning Learn about which cleaning products should be used for each area.

Tables Make sure to use a sanitizing spray to clean the tables after the patrons have left. There shouldn't be any visual residue or stickiness on the table.

Handwash Station Refill the soap dispensers in the bathrooms with the bulk bottles of handwash.

Toilet Use the toilet cleaning solution around the inner rim of the toilet and use a solution of bleach in water to clean the floors of the bathroom.

Once the customers leave... ...time to UNSET the mood. Turn up all the lights.

Pick up any unvaccumable things off the floor. It might've been a wild night. Prepare that mop bucket with hot water.

Then... Remove, clean and tidy the chux tubs from the stations. Put clean chux in bin to be recycled for the next day. Put teatowels in the dirty laundry bin. Wash tubs at dish drop. Take bill trays from bar to dishdrop to be cleaned. Spray and wipe all tables and chairs thoroughly (including bar chairs). And until the manager tells you to do so: do not reset or unset tables.

TIME TO MOP!

Put wet floor signs out the back and front please! Mop whole venue (except bathrooms) back to front. Squeeze mop to make sure floor is not too wet and marks are coming off floor.

Thank you! (now time to clean the bathroom!)
